Not really a recipe, just a how to.   Great in GORP or alone.  Talk about eating garbage, this should keep all the recyclers happy.  Seriously, it tastes great.

Citrus peels:     orange, grapefruit, lemon, lime, or tangerine will do.

Sugar

Water

1:2 ratio of water to sugar should be used, plus sugar to roll them in.   You will need approx. 1 cup of water and 2 cups of sugar for each cup of prepared peel.

1. Clean outside of rind.  Cut in 1/4ths.  Cover in water, boil, then lower heat to simmer for  10 minutes.  Discard water, repeat twice more (grapefruit may need additional boiling).  Place in colander, drain.   Scrape away the white pith when cool enough to handle trying not to rip.  I use a teaspoon.

2. Cut into strips, 1/4 to 1/2 inch wide.  Measure.

3. Boil the water and sugar, until sugar is dissolved.  Add peels.  Slow simmer 30 to 45 minutes until most of liquid is gone.  Drain in colander.  I like to place it over the pot they were cooking in as I’ll use the left over syrup on pancakes or hot buttered biscuits.

4. When peel is cool, roll in sugar and place on wire rack to dry overnight, or if preferred place in 200 degree oven an hour or so.

Once dried, they can be stored in an airtight container.

Blood oranges make a beautiful addition.
